500g Pork Mince
10 slices Rasher Bacon
200g Tasty Cheese
1/4 cup Dried Apricots
1/4 cup Pistachios
1 Onion
3 sticks Celery
3 cloves Garlic
2 - 3 sprigs Rosemary
1 Tbsp Worcestershire Sauce
1 tsp Chili flakes
1 tsp Fennel Seeds
1 tsp Dried Oregano
1 - 2 Sheets Puff Pastry

Sautee diced onion, fennel seeds, garlic, oregano, rosemary in a frypan on a medium heat until onions are translucent

In a bowl mix onions into the pork mince, add chopped pistachios & dried apricots, grate celery in, add worcestershire sauce & season with salt & pepper.

On a piece of clean film lay the rasher bacon vertically, spread a layer of the mixed mince over the bacon, leaving an edge of around 1 inch at the top. Place cut lengths of tasty cheese into the centre, roll up like a sushi roll firmly with the clean film, place into the fridge for at least an hour to firm up, you can do this the night before also.

Once the roll has firmed up, place puff pastry on a floured board, remove the roll from the clean film and roll the pastry firmly around the sausage roll, using egg wash to help it stick and give it a golden brown colour.

Pop in the over at 190 degrees for 15 - 20 minutes, remove and let it rest for a few minutes, cut and enjoy.
