Ingredients

Adjust Servings:
4 Danny's Original Pita Bread
3 Medium potatoes
2 Eggs
1 Large Onion
1 tbsp Flour
¼ tsp Turmeric
½ tsp Ground cumin
Olive oil to coat pan
Salt & Pepper to season
Salad
1/3 Green cabbage
1 Clove garlic (finely grated)
3 tbsp Olive oil
1 Lemon (Juice)
Salt to season

Steps

Grate the onion and potatoes, squeeze and drain all of the liquid. Add the eggs, turmeric, salt & pepper and mix well

Preheat the pan and add about 1cm deep of oil in the pan. Form the mixture in a round shape to fit the pita that you are using (either Danny’s mini pita or Danny’s original pita) which should be about 1cm thick.

Fry both sides until it is golden brown on both sides, then pop it onto a plate with a paper towel on it to absorb the excess oil.

To prepare the salad, thinly slice the cabbage, sprinkle with salt and squeeze the cabbage to soften. Add the lemon juice, olive oil and garlic and mix well.

To serve, take one Danny's Original pita bread, cut open at the top, insert the Latkes and then whilst holding the pita in the palm of your hand, fill the remaining space with the cabbage salad and serve immediately.
