Ingredients

1 Tsp Vegetable Oil
1/2 Onion, sliced
1 Clove Garlic, finely chopped
1 knob Ginger Sliced
200g Prawn tails
200g Beansprouts Washed and drained
4 Tsp Chicken Stock
1 Tsp Oyster sauce
Pinch of white pepper
1 tsp Cornflour mixed with water
1 Spring onion, cut into 1 inch slices
1 Tsp Soy Sauce, or to taste
1 Pack Rice Noodles

Heat oil on high heat. When hot, fry onions, ginger and garlic for 1 minute.

Add beansprouts and fry for 1 minute. Then add in the prawns and fry for further 1-2 minutes.

Add chicken stock and when it starts to boil add oyster sauce, soy, pepper, salt and mix, then gradually pour in cornflour mixture and stir until sauce is thickened.

Add spring onions to wok and mix in. Add more soy sauce to taste if desired and serve with noodles.
