Ingredients

1 Onion, finely diced
1 Garlic clove, crushed
2 Tsp Massaman curry paste
425ml Coconut milk
150g Small new potatoes, halved or quartered if large
1/2 Pumpkin, peeled and diced
1 Cinnamon stick
2 Cardamom pods, squashed
200g Raw king prawns
1 Tsp Brown sugar
2 Limes, 1 quartered to serve
2 Tsp Fish sauce
2 Tsp Peanuts, toasted and chopped
Red chilli, crispy shallots and basil shredded to serve

Sauté the onion and garlic for 2 minutes, add the paste and cook for 1 minute then add the thick bit of the coconut milk for a few minutes until it becomes fragrant. Add the rest of the coconut milk and simmer for a minute.

Add the potatoes, cinnamon, cardamom and simmer for 10 minutes, then add pumpkin and cook until tender, another 10 minutes.
Add the prawns, sugar, lime juice and fish sauce, and cook for 3-4 minutes until the prawns are just cooked and pink.

Serve the curry sprinkled with lime wedges, peanuts, chilli, shallots and basil.
