Ingredients

1 Butternut Pumpkin
50g Butter
1 Onion Sliced
2 Garlic Cloves Crushed
1 Knob Ginger Peeled and Sliced
1 Chilli Chopped
2 Kaffir Lime Leaves
500ml Chicken Stock
1x 400ml Coconut Cream
French Stick
1 Packet Streaky Bacon

Peel and dice the pumpkin, melt the butter in a pot then add the pumpkin, and cook for a minute or two, now add the onion and cook until soft, then add the garlic, ginger, chilli and kaffir leaves and cook for 5 minutes to release all the flavours

Add the stock and coconut cream and bring to the boil, then simmer for 20 minutes or until tender.

Blend until smooth, if too thick add some water to loosen.

Serve with some crispy fried bacon and croutons.
