Ingredients

Adjust Servings:
1 George & Jo's Whole chicken
2 Tsp Miso Paste
50g Butter
2 Garlic cloves Crushed
Large Knob Ginger Finely Grated
3 Tsp Chinese cooking wine
1 tsp 5 spice
1 Bunch spring onions Cut into 2 inch pieces
1 Broccoli Cut into florets
1 Garlic Clove Sliced
2 Tsp Soy Sauce
Knob Butter
2 Tsp Sesame Seeds

Roast Miso & Ginger Chicken with Charred Broccoli

Pre heat the oven to 180c

Mix the garlic, miso, butter, ginger and half the wine together.

Pat the Pat dry the chicken, loosen the skin between the skin and breast and stuff with the butter, add the rest to the cavity along with a pinch of 5 spice.

Tie the legs together and place breast side down in a roasting tray, season with salt and cook for 30 minutes.

Turn the chicken over, add chicken stock and remaining wine and continue cooking for a further 25 minutes.

Whilst the chicken is finishing cooking in the oven, roast the broccoli in a large pan with a little oil, once coloured add the garlic and deglaze with soy and butter.

Add the spring onions and cook for another 20 minutes then rest for 10 in a warm place.

Scatter with the sesame seeds and serve with rice and the broccoli.
