4 108g Fillets Salmon Skin Off
1 Knob Butter
Handful Baby Red Potatoes
25g Sliced Toasted Almonds
Chives
150g Coriander
50g Cashew Nuts
1 Lemon
2 Green Chillies
Rice Bran Oil
50g Parmasean Cheese

Roast Salmon with Coriander Pesto and Sautéed Almond Potatoes

Boil the potatoes with their skins on until 90% cooked, drain and cool.

Dice and sauté in a hot pan in a little oil until coloured, add a knob of butter and toss through the almonds and chives.

Blend the coriander, salt, lemon juice, nuts, chilli and parmesan until the desired consistency using the rice bran oil.

Pan roast the salmon in a pan until golden on all sides, still leaving it pink inside.

Serve with the roasted potatoes and pesto
