Ingredients

2 Large Straight Sided Red Sweetie Peppers Halved & Cored
2 tsp Olive Oil
4 Italian Sausages Meat removed from casings
1 Onion Finely Chopped
1 Courgettes Finely Chopped
1 Stick Celery Finely Chopped
3 Cloves Garlic Minced
1 Cup Cooked Brown Rice
1 tsp Dried Oregano
Salt & Pepper To Taste
60g Grated Parmesan Cheese
Chopped Parsley
120g Shredded Mozeralla
1 Can Crushed Tomatoes
1 Pinch Sugar
2 tsp Balsamic Vinegar

In a frying pan, over medium heat, cook the sausage, breaking it up as you go.

Drain the excess oil and place the sausage meat into a bowl.

Add the olive oil to the pan, and cook the vegetables and garlic until soft.

Dump the vegetables into the bowl with the sausage and cool to room temperature.

Preheat oven to 160c

Add the rice, oregano, salt, pepper, Parmesan cheese, and parsley to the mixture in the bowl and mix well.

Spoon the stuffing mixture into each pepper half, pressing firmly to compact the mixture into the pepper halves.

Sprinkle the mozzarella cheese on top, pour the crushed tomatoes into a casserole dish, season, add the sugar and balsamic, then top with the peppers and bake the peppers until tender, about 25 minutes.

Cool for 10 minutes then serve.
