1/4 cup finely chopped Jalapeño peppers
1/4 jar anchovies
1 tbsp capers

50g parmesan cheese

Preheat your oven to 180 degrees. Then on a chopping board finely chop up chili.

In a small bowl whisk, an egg. Lightly brush the egg wash over one side of the puff pastry. Make sure the pastry has only been out of the freezer for 5 minutes so it has some flexibility but hasn't gone sticky.

Sprinkle capers and anchovies over the pastry.

Tightly roll the pastry from one end.

Using a sharp knife trim the ends off. Slice the rolls evenly down the log. then place on a non-stick baking tray with the filling facing up.

Brush egg wash over the tops of the rolls and sprinkle some cracked pepper.

Grate parmesan cheese over the rolls if you wish then place in the oven on 180 degrees for 10 - 15 minutes or until golden.

Remove from the oven and let the rolls cool for 5 minutes. Serve with your favorite savory sauce.
