Ingredients

1 Pack Danny’s Original Pita Bread or Danny’s Lebanese Bread
1 Medium Brown Onion Diced
2 Large cloves of garlic finely Chopped
2 Medium Capsicum (1 green, 1 red or yellow) Diced
1 Can Chopped Tomatoes
4 Eggs
Olive Oil
¼ Tsp Sugar
Salt & Pepper to season

In a medium sized pan, fry the onion with the 1/3 cup of olive oil over a medium heat. Fry until the onions are transparent.

Add the chopped garlic and the capsicum to the pan, season with salt and pepper and cook over a medium heat, stirring occasionally to avoid sticking for five minutes or until the onion turns golden brown.

Add the can of chopped tomatoes, bring up to heat, then reduce the heat, add the sugar and simmer for at least 20 minutes, stirring occasionally. Taste the dish and season with salt and pepper if required.

The mixture should change colour and be a deep rich red. Create a crater in the mixture and break an egg into the crater. Repeat 3 more times for each of the eggs symmetrically in the pan taking care to ensure they are not too close to the edge of the pan.

Simmer the mixture to cook the eggs as desired. For maximum taste, the yolk should still be runny.

Warm your pita bread in the toaster or oven and serve immediately. Traditionally, this dish is eaten straight from the pan by scooping the egg, vegetables and the sauce with the pita bread.
