Ingredients

Rice Bran Oil
Knob of Butter
1 Onion Chopped
1 Clove Garlic
1 Celery Stick Sliced
1 Leek Sliced
1 Large Agria Potato Diced
1L Chicken Stock
1 Large Head Brocolli Chopped
150g Blue Cheese
2 tsp Walnuts Toasted and Chopped
Sourdough To make croutons

Heat a sauce pan add the oil and butter then add the onions and garlic and cook for 2 minutes, add leek and celery and cook for 5 minutes covered.

Add stock and broccoli stalks and potato, cook until soft, 10 minutes. Now add the rest of the broccoli and cook for 5 minutes, then add blue cheese and blend until smooth, season with black pepper and salt if needed, taste first!

Divide between your bowls and garnish with chopped walnuts and toasted croutons.
