Ingredients

1 Packet Mince
2 Onions
3 Cloves Garlic
1 tsp Oregano
3 Sprigs Thyme
2 Red Chillis
2 tsp Tomato Paste
150ml Red Wine
300ml Beef Stock
1 tsp Flour
2 tins Chopped Tomatoes
80g Swiss Brown or Button Mushrooms
75g Parmasean Cheese
400g Spaghetti

Dice the onions and sweat in some oil for 2 minutes, then add garlic, thyme, oregano and chilli and cook over a low heat for 5 minutes.

Meanwhile in a seperate pan fry the mince in some oil over a high heat, add the flour and stir through and add to the onion pan and deglaze with red wine.

Add the tomatoes and cook for 5 minutes then add the stock and continue to simmer for 30 minutes uncovered. Add quartered mushrooms and cook for 10 minutes, season.

Cook the pasta a drain, arrange in your serving bowls, top with your sauce and finish with freshly grated parmesan cheese.
