Ingredients

Olive oil
1 cup Peppers chopped, green & red
1 Jalapeno pepper, finely chopped
2 Dried chorizo, diced
2 Cloves garlic, chopped
3 Tsp Tomato paste
1 cup Cooked white rice, we used 1 x SunRice Basmati microwave steamed rice pouch
1 can Diced tomatoes
2 cups Chicken stock
2 tsp Ground cumin
1 Tsp Chilli powder
1 Tsp Smoked paprika
Salt and pepper to taste
4 Whole prawns split in half
1/2 cup Grated cheese for topping

In large pan heat olive oil over medium-high heat, sauté peppers, onion and garlic until just tender.

Add tomato paste and cook for one minute, add chorizo and cook for another 2 minutes, then add broth, canned tomatoes, spices, salt and pepper. Stir well. Bring to a simmer, reduce heat too low.

Cook for 20 minutes, then add cooked rice and prawns, then cook for a further 5 minutes until rice is warm.
Season and top with melted cheese and serve.
