Cut the carrots into even Batons, then roast in a hot pan for 4-5 minutes or until cooked, add 1 rosemary sprig and transfer to a hot oven 190c for 15-20 minutes until softened, spoon over the honey and orange juice and return to the oven to caramelize and glaze the carrots for 5 minutes.
Serve with ricotta spooned over the top.
