Ingredients

3 Chicken Breasts
Coriander Leaves For Garnish
Steam Buns or Rice To Serve
2tsp Peanut Oil
2 Onions
3/4 Fresh Chilli
1 Clove Garlic
1 Generous knob Ginger
Small amount Lemon Grass Chopped
2 tsp Soy Sauce
3 tsp Ketchup
1 tsp Brown Sugar
1-2 Stalks Coriander
1 Kafir Lime Leaf
300ml Coconut Milk
1 Lime

    Dice the chicken and add to bowl with 50ml of coconut milk and the kafir lime leaf shredded and marinade for 30 minutes.

    Sauté the onions, garlic and ginger together in the peanut oil for a few minutes until soft and fragrant, add the lemon grass and and chilli then cook another 2 minutes.

    Add the soy, ketchup and sugar and cook down to a glaze slowly then add the coconut milk and simmer for 10 minutes until thickened.

    Cook the chicken pieces in a wok or griddle pan until charred and cooked then add into the sauce and glaze then season with lime and serve with rice or in steam buns.
