Ingredients

1kg Prawns Raw, Peeled and Deveined
Marinade
Juice of 1 Lemon
Ground Black Pepper
1Tbsp Oil
1 tsp Chilli Powder
1 tsp Paprika
75g Butter
3-4 Cloves Garlic Thinly Sliced
1/2 tsp Chilli Flakes
2 Tbsp Tomato Sauce
1 Handful Chopped Fresh Coriander

    Easily the best chilli prawns this side of the Pacific! These are perfect to serve on a special occasion. For extra impact, mum usually made this using tiger prawns with their shells on.

    Wash and drain the prawns, making sure you get rid of the excess water. Then marinate them for about 30–60 minutes before you cook them.

    Combine the lemon juice, salt, pepper, oil, chilli powder and paprika and coat the prawns, making sure they are all well coated before covering the dish and placing in the refrigerator.

    When you are ready to cook them, drain the excess liquid off the prawns.

    Heat butter in a frying pan on a moderate heat and add a splash of oil (as butter can easily burn). Add the sliced garlic and cook until pale golden, then add chilli flakes and the prawns.

    Cook on a low heat for 6–8 minutes.

    Add the tomato sauce and cook for a further 2–3 minutes, or until the prawns are cooked. Make sure you don’t overcook them as they will get rubbery and hard to chew.

    Sprinkle with chopped coriander and serve with handmade chips.
