Ingredients

Olive Oil
1 Medium Onion finely chopped
3 Garlic Cloves sliced
200g Chorizo chopped into small pieces
1 Fresh Red Chilli cut in half
400g Can Chopped Tomatos
400ml Fish Stock
4 White Fish Fillets Snapper, Hapuka or Monkfish
400g Can Butter Beans Drained
1/2 small pack Fresh Parsley Finely chopped
SunRice Microwavable Rice

Method

Heat the oil in a deep frying pan and add the onion, chilli and garlic. Cook over a medium heat for 5 mins until starting to soften. Add the chorizo and cook for another few mins to release the oil. Coat the onion in the chorizo oil, then tip in the tomatoes, add the stock, Season and bring to the boil.

Once boiling, reduce heat and simmer the sauce for 20 minutes until flavoursome and half reduced, season the fish fillets and nestle into the pan. Reduce the heat and gently simmer for about 7 mins. Gently mix in the butter beans and cook for 1-2 mins more until hot.

Scatter with parsley and serve in bowls with SunRice cooked rice.
