Ingredients

Olive Oil
1 Packet of filo pastry
Knob butter
200g Baby Spinach
6 Rashers of bacon
6 Large free-range eggs
200ml Milk
100g Goats cheese
1 tsp Mustard powder
½ a bunch Fresh Chives
1 Lemon
3 Medium leeks

Preheat the oven to 180°C

Lightly grease a muffin tin with oil.

Cover the moulds with a layer of pastry, letting the edges overhang slightly. Brush with a little oil, then add another layer of pastry, repeating until they are all lined.

(there should be 3 or 4 layers).

Wilt the spinach in a pot with the butter, season and drain on kitchen paper.

Place the spinach on a board and roughly chop, then place in a large bowl and set aside.

Fry the bacon until crisp, then set aside to cool, crumble and then add to the spinach.

Whisk the eggs in a large bowl with a pinch of sea salt and black pepper. Whisk in the milk and mustard powder, chives, then grate in the lemon zest.

Slice and add the leeks to the bacon and divide between the nests, add some goats cheese and pour over the egg mixture and carefully place the dish on the bottom of the oven.

Bake for 15 to 20 minutes, or until just set. Leave too cool slightly and serve with a salad.
