Ingredients

1 x Red Onion – diced
2 Tbsp Sesame Oil
4 x Garlic Cloves – crushed
500gms Minced Chicken
1 x Spring Onion – cchopped, reserve the green tops for garnish
2tsp Fresh Grated Ginger
1 x Carrot – Peeled and chopped
½ Zucchini – chopped
4 x Small Mushrooms – chopped
¼ Red Cabbage – chopped or shredded
¼ Green Cabbage – chopped or shredded
1 x Large Floret Broccoli – chopped
3 x Asparagus Spears – cut or broken into 3cm lengths
6 x Fresh Peas in pods – or ¼ Cup Frozen
5 x Iceberg Lettuce leaves

Method

In large fry pan heat 1 x Tbsp. of Sesame oil and sauté off the red onion for 2mins, then add 2 x crushed garlic cloves and cook until the raw garlic smell has gone, about 1 min.

Turn heat up and add the mince, fry until cooked, 7 – 9 mins, add more oil if needed, finish with 2 x Tbsp. Hoisin sauce, stir to incorporate, then remove meat from pan into bowl.

Place pan back on heat keeping the heat med/high, don’t worry about bits on the bottom of pan, these will bring lovely flavour.

Add remaining oil, then remaining garlic, sauté off 1 min then add carrot, cook 30 sec, add zucchini & mushroom and cook fast to remove all liquid 1 min, then add cabbage’s & broccoli for 30 seconds followed by fresh peas and asparagus and the mince mix.

Stir to combine and to heat through the mice, then serve in a bowl with chopped spring onion and Lettice leaves to wrap it in if wanted. Optional sweet chilli sauce and QP mayo to serve .
