Ingredients

4 Danny's Original Pita Bread
4 Scotch Fillet steaks (500g)
4 eggs
2 large tomatoes sliced
1 telegraph cucumber sliced lengthways at an angle
Salt & pepper to season
Olive oil for cooking

Preheat a heavy frying pan over a high heat. Slice steak to 10mm thick and season with salt and pepper.

Rub each steak with some olive oil and place in the preheated frying pan. Leave for two minutes, do not move the steak. Turn the steak over and repeat.

Preheat another frying pan over a high heat and add about 4tbsp of olive oil, just enough to coat the frying pan. When the oil starts to smoke, break each egg in to the frying pan and salt them.

Keep the pan hot so the egg is nice and aerated, not solid. After about two minutes, flip gently and cook for about 30 seconds to one minute, then remove from the heat.

Take your Danny’s Pita Bread and cut open at the top, open in the palm of your hand and place the steak into the pita. Top with the sliced cucumber and tomato, then gently place the egg on top.
