Ingredients

500g Prawns, peeled and de-veined
2 tsp red curry paste
3 garlic cloves, peeled and minced
1 tsp freshly grated ginger
1 lime (or lemon), juiced
400ml coconut milk
2 tsp coconut oil (substitute with avocado oil or olive oil)
1 handful basil leaves
to serve Asian greens (bok choy)

Combine the prawns, red curry paste, garlic, ginger and lime juice in a large bowl. Cover and refrigerate for 1 hour

Remove the prawns from the fridge

Heat coconut oil in a large frying pan over medium-high heat. Add the prawns and sauté for a couple of minutes

Pour in the coconut milk and basil and cook for a further minute

Serve immediately on a bed of stir fried Asian greens
