2 Red onions, peeled and finely diced
1kg Minced meat 1/2 beef 1/2 pork
1 Tsp Dijon mustard
1 Tsp Dried Oregano
1 Tsp Ground Cumin
1 Tsp Ground Coriander
2 Handfuls Breadcrumbs
2 Large Eggs
Salt and freshly ground black peppe
100g Freshly Grated Cheddar Cheese
1 large Red onion, peeled and finely diced
2 Red or yellow peppers, deseeded and roughly chopped
10 cloves Garlic, peeled and finely sliced
3 Fresh red chillies, finely chopped, to tast
½ Teaspoon Smoked Paprika
6 Tsp Worcestershire Sauce
6 Tsp Tomato Ketchup
6 Tsp Cider Vinegar
6 Tsp Molasses
2 Tsp Dijon Mustard
400ml Hot Coffee
1 can Chopped Tomatoes
3 Ripe Tomatoes Diced
Fresh flat-leaf Parsley

Sweat the onions in the olive oil then add to the mince and mix through rest of the ingredients apart from the cheese.


Roll into large balls, he make a small hole in the centre and fill with cheese then seal and re ball, bake in a hot oven in a casserole dish for 20-25 minutes, turning regularly


Meanwhile start the sauce, slowly sweat the onions, garlic, peppers and chillies until soft, add the smoked paprika and cook for another 5 minutes then add Worcestershire sauce, vinegar, ketchup, mustard, coffee and the tomatoes. bring to the boil the turn down and cook for 20 minutes, then add the meat balls to the sauce and continue cooking for another 10 minutes or until glazed, the sprinkle over chopped parsley.
