Ingredients

1kg Skinless, Boneless Chicken Thighs Trimmed
1 Knob Butter
1 Knob Fresh Grated Ginger
3 Cloves Garlic Minced
1 Stick Lemon Grass Finely Sliced
12 tsp Corainder Seeds
1/4 Cup Chilli Sauce
1 tsp Cayenne Pepper
1 tsp Crushed Red Chilli Pepper Flakes
1/4 Cup Brown Sugar
1/2 Cup Chicken Broth
Small Can Pineapple Chunks
Coriander Chopped
Chopped Spring Onion For Garnish

In a medium mixing bowl combine chicken broth, honey, minced garlic, chili sauce, Ginger, cayenne, pineapple chunks and crushed chili flakes; mix until well combined and set aside.

Heat a wok add oil and butter. Season chicken thighs with the lemon grass, coriander seeds, salt and pepper and sauté the chicken until browned for 2/3 minutes.

Add the prepared honey garlic sauce to the pot, cover and lock the lid. Cook for 15/20 minutes.

Transfer chicken to a cutting board and shred the meat using 2 forks Transfer to serving plate, mix with chopped coriander and spoon the cooking juice over and garnish with green onions. Serve over rice.
