1 Snapper
2 Shiitake Mushroom
1 Spring Onion
1 Onion
3 Cloves Garlic
1 Carrot
1 Bunch Coriander
1 Yellow Capsicum
500ml Chicken Stock
1 Green Capsicum
Seasoning
Vegetable Oil
Potato Starch or Corn Flour
Flour
Soy Sauce
Rice Wine
Salt
Sugar
White Pepper
Chinese Black Vinegar
Sesame Oil

    Mix the potato starch or the corn flour with the flour.

    Score the fish fillet and season it with salt and white pepper. Then coat it with the flour mixture and set aside.

    Deep fry the fish and let it on a plate and set aside.

    Cut all the vegetable into strips and put aside.

    Sauté the spring onion and ginger, then add in the vegetable and stir fry it together. Add in the chicken stock and seasoning. Thicken it with corn flour and pour it onto the fish.
