Ingredients

Thai Basil Chicken
2-3 tsp Oil
3 Thai Bird Eye Chillis Deseeded and thinly sliced
3 Shallots Sliced
5 Cloves Garlic Sliced
500g Chicken Mince
2 tsp Sugar
3 tsp Soy Sauce
3 tsp Fish Sauce
1/3 Cup Chicken Stock
1 Bunch Thai Basil Leaves
Coconut Rice
1 Cup Basmati Rice
1 Can Coconut Milk
1/4 Cup Water
Salt
1/2 tsp Sugar
1/2 tsp Chilli Flakes
pinch Tumeric
1 tsp Ginger Finely Chopped
Sliced Almonds

    Thai Basil Chicken

    In a wok over high heat, add the oil, chilies, shallots and garlic, and fry for 1-2 minutes.

    Add the ground chicken and stir-fry for 2 minutes, breaking up the chicken into small bits.

    Add the sugar, soy sauce, and fish sauce.

    Stir-fry for another minute and deglaze the pan with the broth.

    Because your pan is over high heat, the liquid should cook off very quickly. Add the basil, and stir-fry until wilted

    Serve over coconut rice.

    Coconut Rice

    Combine the rice, coconut milk, salt, sugar, chilli, turmeric and ginger.

    Cook over medium high heat, stirring until mixture comes to a low boil.

    Immediately reduce heat to low.

    Cover and cook for about 18 minutes.

    Fluff with a fork.

    Then cover, and let sit for 5 more minutes.
