500g Beef Mince
1 Medium Brown Onion Finely Chopped
1 Small Butternut Pumpkin Peeled and Diced
2 Cloves Garlic Crushed
1 tsp Dired Oregano
1 tsp Flour
150ml Red Wine
1 tsp Tomato Puree
1 Can Crushed Tomatoes
5 Fresh Tomatoes
2 Green Chillis
2 tsp Ground Cinnamon
1 tsp Ground Allspice
1/3 Cup Grated Mozzarella Cheese
50g Grated Parmesan Cheese
White Sauce
50g Butter
50g Flour
400ml Milk
1 tsp Finely Grated Nutmeg
50g Mozzarella
1 Egg

Fry the beef mince in a little oil until browned, then add onions, garlic and herbs & spices, Stir through flour, add wine, tomato puree, canned tomatoes and pumpkin then simmer for 20 minutes.

Build the Moussaka by layering the meat sauce, sliced tomatoes together then add the white sauce on top, sprinkle with the remaining parmesan cheese and bake for 45 minutes in a hot oven (180c) until golden brown

White Sauce

Melt the butter in a large saucepan and stir in the flour. Cook for a few seconds, then gradually stir in the milk.

Add half the Parmesan, mozzarella and the grated nutmeg
