Ingredients

12 Prawn tails
6 cups  Chicken stock
2 Tsp Tom Yum Paste
1 Stalk Lemongrass, lower 1/3, finely minced
4 Cloves garlic, minced
1/2 Onion, sliced
Large knob ginger, sliced
3 Leaves Kaffir Lime 
2 tsp Lime Juice
2 Tsp Fish Sauce
1/5 Tsp Soy Sauce
1 Carrot, thickly sliced
60g Shiitake mushrooms
1 Small courgette, sliced
1 cup Cherry tomatoes, sliced in half
1/3 can Coconut milk
1 Tsp  Chili oil
Chilli flakes to taste
1/3 Cup Fresh coriander
Brown Sugar

Pour stock into a pot and heat, Add tom yum paste and lemongrass, including upper sections of the stalk.

Boil hard 5 to 6 minutes to soften.
Add garlic, onion, ginger, lime leaves, lime juice, fish sauce, soy sauce, and carrots. Reduce heat slightly, cover, and continue lightly boiling 5 minutes. Add mushrooms and zucchini, and continue lightly boiling another 5 minutes.

Add shrimp and cherry tomatoes. Cook 3 minutes, or until shrimp are pink and plump.
Turn down the heat to low and add coconut milk plus more fish sauce to taste.

Add brown sugar if too sour and chilli flakes if you want it spicy.

Serve with fresh coriander sprinkled over, and enjoy!
