Ingredients

Adjust Servings:
150g Buckwheat flour
130g Caster sugar
110g Unsalted butter, softened
1 Egg
½ tsp Bicarbonate of soda
½ tsp Salt
100g White chocolate chips
1tsp Vanilla bean paste
1 tsp Ground cardamom

Mix sugar and butter with a hand mixer until light and fluffy

Crack egg into a small bowl and then slowly add into the butter and sugar mixture whilst continuing to whisk.

Add all remaining ingredients and mix until combined. Transfer into a bowl and place into refrigerator for 30 minutes.

Preheat oven to 180°C . Line two baking trays (30 x 40 cm) with baking paper and set aside.

Roll Tbs of cookie dough into balls and place onto prepared trays, flattening slightly with the back of a fork. Bake for 12-15 minutes (180°C), or until golden brown. Leave to cool slighty on trays, then transfer onto a wire rack to cool completely.

Tip:
Drizzle with melted white chocolate and allow to set for 30 minutes before serving.
