Ingredients

200gm Cherry tomatoes on the vine
2 Zucchini cut into rounds
1 Yellow peppers, deseeded & cut into large strips
4 Spring onions, cut into large slices
½ bunch Asparagus cut into large slices
5 Tbsp Olive oil
4 Sprigs Rosemary
Handful mint
1 Tbsp Butter
12 New potatoes
8 Lamb Chops
Mint sauce
2 Tbsp Balsamic vinegar
1Tbsp Caster sugar
3 Tbsp Olive oil
10 Mint leaves, finely chopped
Salt and pepper to taste

Place veg and cherry tomatoes onto Tala baking tray, drizzle 2/3 of the oil add the rosemary and season. Cook in hot oven (200deg) 15 mins, move tray every 5 mins.

Add new potatoes to pot with salted water, a large handful of mint and simmer, 15 mins, then drain, then place back into pot with knob of butter.

Heat Ballarini fry pan with remaining oil season and cook lamb chops for 4 mins each side, remove from heat and cover while we make the sauce.

Mix balsamic, sugar and olive oil, season then add mint. – use Easy Pull

On platter scatter the roasted veg, followed by the new potatoes then the lamb chops, drizzle over mint sauce.
