Ingredients

1 pack Danny’s Original Pita Bread
4 Boneless Chicken Thighs (skin on)
1 Cinnamon stick (fresh is best)
Salt
Pepper
half a Lettuce (round)
2 medium tomatoes
1 Lebanese Cucumber
Lime or a lemon
Olive Oil (good quality)
Round wooden skewers (15cm long)

Firstly, we’ll prepare the salad unseasoned, so all we have to do is season it once the chicken is ready.

Finely cut the lettuce so it is about 5mm wide, then cut in half to shorten the length of the lettuce and place in a bowl. Cut tomatoes in half and then cut the halves into quarters and thinly slice each quarter (about 2mm wide). Repeat with the cucumber and set the salad aside, unseasoned. (If you are preparing this salad well in advance, please keep in the fridge).

Rinse the chicken thighs and then dry them off with a paper towel. Season the chicken with salt & pepper and then grate the cinnamon over the thighs. Turn the chicken over and then repeat the seasoning and cinnamon.

Next, insert four skewers evenly spaced side by side into each thigh. Cut each thigh ensuring each skewer has seasoned chicken on it.

For best results, it is recommended to use a wood barbecue to get the full flavour, but you can use your flat/griddle pan and still get delicious results.

In a hot pan, place the chicken skin side down and let the fat fry the chicken. After two minutes, turn the chicken and fry the other side for about two minutes. Turn occasionally for about 10 minutes so the chicken is marinating and cooking in it’s own flavours. The cooking time depends on the thickness and size of the chicken thigh, but usually this takes about 10 minutes.

Now it’s time to finish that salad, so squeeze a whole lime/lemon over the salad, add 1/3 tsp of salt and 5 tbsp of good olive oil. Mix thoroughly, taste and add more salt if desired.

To serve, warm Danny’s original pita bread, cut each in half and grab one half of pita in your hand, put the chicken skewer in the bottom edge of the pita until the chicken touches the pocket, grab hold of the chicken with your pita and carefully remove the skewer, leaving the chicken in your bread. Repeat with another half pita and chicken skewer, put on a plate and add the salad.
